Debone chickenMix all ingredients, holding back the spinach and half the cheese.Pour a smalla amount of enchalada sauce in the bottom of the pan, and then put corn tortillas on the bottom. Spread about 1/2 to 1/3 enchalada mix on the tortillas, and cover with spinach. Repeat until mix is all gone. Cover and bake until bubbly.
