1 medium red onion chopped
2 garlic cloves
4oz chickpeas
1 cup zucchini chopped
1 cup mushrooms chopped


How Do I Make Chickpea and spinach couscous?

Here is how you make Chickpea and spinach couscous:

Melt 10g of the butter in a saucepan over a low heat so's not to burn it. Mix in the dry couscous and very gently heat the couscous whilst stirring for 2 mins (this will stop the couscous going claggy). After 2 mins add enough boiling water to barely cover the couscous and turn the heat off. Add some salt, pepper, dried mixed herbs and about 2 tsps lemon juice and place to one side (don't mix at this stage). On the top of the couscous place the cooked blended spinach and one clove of cooked garlic which was blended with the spinach.In a wok, heat the oil and place the onion and the other garlic clove in. Saute for a minute or so and then add the chickpeas. Again saute for a minute or so then add the zucchini and mushroom. Cook for about 5 minutes. About 2 minutes before the chickpea mix is cooked fork the spinach and garlic through the couscous and add the last 5g of butter and heat on a low heat stirring continually.
