1/8 tsp. cayenne pepper
2 Tbsp. vegetable oil
1 Tbsp. Hoisin sauce
3 scallions, thinly sliced
10 oz. fresh spinach, well washed or you can substitute Romaine lettuce, chopped (about 10 cups loosely packed)
1 C. fresh cilantro, coarsely chopped
1/2 tsp. Asian sesame seed oil

Here is how you make Hoisin Glazed Scallops with Spinach and Cilantro:

Serves 4Dry scallops with paper towels and season w/ 1/2 tsp. Kosher salt & cayenne pepper. In a 12-inch skillet, heat 1Tbsp. of oil over high heat until hot. Add scallops & cook, turning once after 3-4 minutes, each side, until golden brown and just opaque. Remove from skillet onto a large plate and brush w/Hoisin sauce. Wipe out the skillet and heat remaining 1 Tbsp. oil over medium-high heat. Add 2/3 of the scallions and cook, stirring about 30 seconds until softened. Add the spinach and cilantro and pinch of salt. Cook, tossing constantly w/tongs until just barely wilted. Remove skillet from heat and drizzle sesame seed oil over mixture. Toss to combine. Serve the scallops on top of lettuce and cilantro.
