Add couscous, cover, and reduce heat to low. Continue to cook until most of the water is absorbed and the couscous has softened, then remove from heat - keep it covered.2) In the meantime, heat the olive oil and butter over medium heat in another pan, until the butter is melted but not bubbling. Add onion & garlic, and spices, and cook until onion is soft.3) Add the onion, garlic and spice mixture directly to the cooked spinach and couscous, mixing to incorporate.4) Top with nutritional yeast and enjoy!I served this with some oven fried, spice crusted tofu.
