2 tbsp fresh basil, chopped
2 tbsp fresh peppermint, chopped
1 tbsp fresh parsley, chopped
2 lime yields juice
1 tbsp olive oil
2 cup vegetable broth (I used one vegetable stock cube to 2 cups of water)

Here is how you make Minty Spinach Cream:

Start by broiling the bell pepper: heat for approximately 5 minutes on each side or until blackened all over.Meanwhile, prepare and heat the vegetable stock. Chop the spinach and add to the stock in batches. Use a somewhat large pot but keep in mind that spinach shrinks while cooking. Remember to turn the bell pepper.When the spinach is cooked (preferred tenderness reached), drain and set aside.Chop the garlic and slice the tomatoes very thinly. In a large non-stick pan (use a larger one as the cooked spinach will be added as well), heat the olive oil. Saute the garlic and tomatoes, add the lime juice; cook covered for about 3 minutes. Remember to keep an eye on the bell pepper. Add the cooked and drained spinach to the tomatoe paste. Mix well, cook covered over medium heat for a further 3 minutes. Set aside and remove from heat to cool down.Meanwhile, the bell pepper should be blackened on all sides. Place in a bag and let stand for 10 minutes (until you chop the basil, peppermint, and parsley). Peel and seed, cut into strips.In a blender, combine the cottage cheese, basil, peppermint, parsley, and red pepper.
