16 oz Cream Cheese
6 cup Spinach, fresh
3 cup Artichokes, quartered and canned
2 cup, shredded Mozzarella Cheese, whole milk
1 cup, chopped Onions, raw
2 cloves Garlic
2 dash Salt
6 tbsp Butter, unsalted
0.75 cup Sour Cream

Here is how you make Hasselback Creamy Spinach Potatoes:

Preheat oven to 425. Slice potatoes 3/4 of the way through, about half an inch between each cut. Melt butter. Pour half over potatoes. Bake for 35 minutes. Baste with the remaining butter, then bake for another 20 minutes. Meanwhile, slice onions, mince garlic. Heat skillet and add a dash of olive oil. Cook onions, add a dash of salt and pepper, until they start to soften. Add garlic and continue cooking another minute. Stir in artichokes and cream cheese. Cook until cheese is melted. Add in the spinach and sour cream; cook until spinach wilts and everything is nicely blended. Remove potatoes from oven. Using a spoon or fork, push some of the spinach dip between slices of potatoes, being careful not to separate the potato slices all the way. Place some additional spinach dip on top of each potato and pack it down softly. Bake an additional 15-25 minutes, until topping begins to turn golden brown.
