Here is how you make Crustless Spinach Tart:

Pre-heat the oven to 360 degrees. Heat some olive oil in a large saucepan over medium-high heat and cook the onion, parsley and bacon for 3-4 minutes, until the onion is soft but not colored. Add the spinach and ngarlic and stir through. Cook, covered, for about 6 minutes, or until the spinach is cooked and soft. Take the pan off the heat and set aside to cool slightly. Add the egg yolks and quickly stir in. Then add the sour cream, ricotta and freshly ground pepper. In a medium-sized bowl, beat the egg whites until thick and glossy. Add these to the spinach mixture and gently fold through. Pour the mixture into the prepared flan dish and bake for about 45-50 minutes, or until the top is golden brown.Serving Size:?makes 6 servings
