I was hesitant to adjust it to this lower calorie version, but it actually turned out better than the original; it's still my son's favorite!

Put about 6 cups of water on the stove to boil.Squeeze excess moisture from spinach and place into a large bowl. Add ricotta, Parmesan, flour, and egg substitute, stirring until well combined. Shape mixture into 12 balls, dusting them lightly with flour for easier handling.Preheat oven to 350.Gently drop dumplings into boiling water one or two at a time. Cook for 1-2 minutes, until the dumplings begin to float to the surface.Remove with a slotted spoon and place in a glass baking dish lightly coated with butter flavored cooking spray.
