Add the bread crumbs and cook for 6 minutes. Turn off the heat and stir in the parmiggiano-reggiano cheese. Empty the crumbs into a bowl.In a large pan over medium-high heat, warm 1 tsp. of oil. Cook the spinach, then drain it.In a large saucepan, melt 1 tbs. butter. Add the onion and cook for 5-6 minutes. Add flour and cook, stirring occasionally, for 1 minute. Slowly whisk in the cream and half-and-half. Add the clove, nutmeg, bay leaf, and 1 thyme sprig. Simmer, whisking constantly, for 3 minutes. Let stand for 5 minutes. Strain into a bowl then return the mixture to the saucepan over medium heat. Stir in the Emmentaler cheese until completely melted. Mix the spinach and the sauce. Season with salt and pepper. Transfer to a gratin dish and top with the bread crumbs.
