1 box of frozen spinach leaves

Here is how you make Mild Indian Lentils with Spinach:

Makes 2 main course meals or 4 side dishes.Rinse and sort through 1 cup of lentils. I used the green variety but you can substitute red lentils or puy lentils if you like.After rinsing add lentils to a pot with 4 cups of water. Bring to boil over a medium heat - lentils foam and boil over a pot if you start at a higher temperature.Let simmer for about 20 minutes. Meanwhile finely chop the onion, garlic and ginger. Add to lentils along with the tablespoon of Patak's Mild Curry Paste. Stir and cover, reduce heat to low. Defrost and chop the frozen spinach.
