2 T olive oil
6 oz can mushrooms
1 clove garlic
1 box frozen chopped spinach, thawed, drained
2 eggs
1 container (16 oz) lowfat cottage cheese
2 T basil
2 cups pasta sauce


How Do I Make Spinach and Mushroom Manicotti?

Here is how you make Spinach and Mushroom Manicotti:

Cook manicotti for 7 minutes, drain. Heat olive oil in large skillet, saute mushrooms and garlic for 7 minutes. Press water out of spinach, add to mushrooms and cook for 5 more minutes. Set aside to cool. Lightly beat eggs in large bowl. Add cheese, basil, salt and pepper to taste. Add spinach mixture and stir until well blended. Stuff shells and lay in 13 x 9 baking pan (sprayed). top with pasta sauce. Bake at 350 for 30 minutes covered with foil.
