2 med-lg yellow onions, thinly sliced
2 Tbsp olive oil, plus 2 tsp
12 cloves garlic, peeled
16 cherry tomatoes, halved
1 Tbsp chopped fresh basil
1/2 Tbsp chopped fresh oregano
4 cups (about 2 oz.) fresh spinach leaves, chopped
3 tsp capers, drained
1 cup freshly grated Parmesan cheese

Here is how you make Cornmeal Pizza with Spinach and Capers:

1. Preheat oven to 375. Saute onions in 2 tablespoons olive oil over med-high heat, stirring often, until brown and caramelized, 20 minutes. Set aside.2. Drizzle garlic with a little olive oil, place on a baking sheet, and roast at 375 for 10-15 minutes, turning once. Cool and chop.3. In a medium bowl, toss cherry tomatoes with basil, oregano, and 1 teaspoon olive oil.4. Increase oven temperature to 425. Remove frozen pizza crusts from package and brush each with 1/4 teaspoon olive oil. Sprinkle with caramelized onions, then garlic, then spinach. Top with tomato-herb mixture, capers, and cheese.5. Bake on middle oven rack for 12-17 minutes, or until the cheese is melted and the crusts have begun to brown.6. Cut each pizza into sixth.
