1 lb. lean pork tenderloin
2 cups fresh spinach
2 slices deli ham
2 slices provolone cheese or your cheese of choice

Here is how you make Spinach Stuffed Pork Tenderloin:

Cut the tenderloin down the middle as if you were butterflying it. Don't cut all the way through it though. After you've cut down the center, cut once on each half of the tenderloin. Cover with plastic and flatten to 1/4 inch thick. After flattened season with your choice of seasonings...I used garlic powder and celery salt...rub in the seasonings. Put the cheese on the tenderloin after flattened. Then the spinach, then the ham. Roll up jelly roll style. Tie with kitchen string every 1 1/2 -2 inches.
