4 eggs
4 oz goat cheese or feta
4 oz skim milk
4 0z fat free sour cream

Here is how you make Mediterranean Spinach Quiche:

Makes 6 servings.Saute green onions, garlic, red pepper in bacon fat and olive oil spread for 5 minutes. Add spinach leaves and continue sauteing until limp. Beat eggs, milk and sour cream. Season to taste with Cavender's Greek Seasoning. Break goat cheese into pieces and add to egg mixture. Addvegetables, stir and pour into pie crust. Bake at 375 for 40-45 minutes or until set.This mixture could be made into a fritata without the crust and would lower the carb count if sensitive to these carbs.
