1/2c Red onion, diced
1/2c Orange bell pepper, diced
2c Spinach, raw or thawed & drained
1/2tsp Salt
1/2tsp Black pepper
1/4tsp Nutmeg
16oz Greek yogurt, plain
4 Eggs
8oz Mozzarella, grated
4oz Smoked salmon, such as Coho or Sockeye
1 9" Pie crust*

Here is how you make Spinach and Salmon Quiche:

Saute onion, pepper in olive oil until partly soft. Add spinach and continue to cook, stirring frequently, and let water cook off. Add 3 seasonings and remove from heat.Mix yogurt, eggs and mozzarella - I play with the amounts quite a bit so try more or less of each to your taste. Add chopped smoked salmon and blend evenly. Stir in cooled spinach/onion mixture till blended.Pour into 9" pie crust and back at 350F for 1 hour.Serving Size:?Makes 6 slices
