Here is how you make Black Cod on Bed of Spinach:

Wash spinach, dry well (can be done ahead).Heat broiler to HIGH. Lightly spray baking sheet with PAM and heat under the broiler.In bowl, using a whisk, mix honey, soy, lemon juice. (If using Agave, only 1 teaspoon is needed).Pat dry the fllet with paper towel, brush glaze on both sides. Using gloves, remove hot baking sheet from oven. Place cod, skin side down, and return to broiler. Broil 10 minutes or when fish flesh is opaque.Heat olive oil in fry pan over medium heat, add thin slices of garlic, reduce heat to medium-low and cook 3-5 minutes then add the spinach into pan, toss and cover pan.
