12 oz. ground elk Italian Sausage
2 cans Italian diced tomatoes
1-2 cloves garlic, minced
1 cup chopped onion
1 can tomato sauce
8 oz. frozen chopped Spinach
Add additional Italian seasoning, basil, etc.- (as much as desired).

Cook pasta according to instructions; When done, rinse in cold water for about 10 seconds to stop the cooking process; drain and set aside. After starting the pasta, break up & start browning sausage in a skillet like ground beef. [If you ARE using elk, you may need to add a bit of olive oil (not in counts), it just depends on how much fats your butcher added to the meat.]Add the onion, spinach and garlic to the sausage & cook.
