1 six ounce bag of baby spinach

2 slices of white bread, finely chopped

1/4 cup skim milk

1 large egg

1/4 cup fresh parmigiano cheese

3 tbls pine nuts ( I toasted mine in a dry frying pan)

3 tbls chopped red onion

1 lb hot Italian chicken sausage, casings removed (I used Isernio's hot Italian chicken sausage)

salt and pepper to taste

5 large Italian frying peppers- (or any long type, not spicy pepper like anaheim)-sliced in half lengthwise and cored, stems left intact

2 tbls extra virgin olive oil

1 cup low sodium chicken broth

1 cup canned tomato sauce

Here is how you make Spinach and Sausage Stuffed Italian Peppers:

1. In a large skillet, cook spinach until wilted, about 1-2 minutes. Squeeze out all the water and coarsely chop the spinach. Rinse and dry pan.2. In a large bowl, knead the chopped bread with the milk, egg and cheese to form a paste, knead in the pine nuts, onion, sausage and spinach and season lightly with salt and pepper. Using lightly moistened hands, divide the mixture among the pepper halves and lightly pack it in.3. In the skillet, heat the olive oil until shimmering, Add the stuffed peppers, filling side down, and cook over high heat until well browned, about 4 minutes. Turn the peppers and cook until the skins are browned and blistered, about 4 minutes longer, Add the tomato sauce and chicken broth, cover and simmer until the sausage filling is cooked through and the pepper are tender, 9-10 minutes.
