When they have finished boiling, dunk in cold water to stop them from cooking further. Lay them out on a cookie sheet seam side down to cool. Remove stems and blanch spinach, squeeze out excess water. mix together (I use a mixer) the cream cheese, eggs, ricotta cheese, tobasco sauce, until smooth, add mozzarella cheese, mix, add spinach mix. Put a little sauce in bottom of casserole dish, spoon about 2 TB of the mixture into the shells (I use a rice paddle) and place in bottom of dish seam up. Repeat for rest of shells. Top with rest of sauce. Sprinkle with 1 TB shredded mozzarella cheese. Bake covered at 350 for 1 hour. Nutrition is based on 1 shell. I would serve 3-4 per person with sides.
