?2 Boneless, skinless chicken breast ? 5 baby portobello mushrooms ? 1 bag of baby spinach ? 1/2 red onion diced ? 2 tbs miced garlic ? 4 slices mozzarella cheese ? 2 tbs canola oil ? 2 tsp creole seasoning ? 4 tsp garlic salt ? salt & pepper to taste ? 2 tsp Mr. Dash
Thaw chicken breast, season with 2 tsp Mr. Dash, 2 tsp garlic salt, 2 tsp creole seasoning, put 1 tbs canola oil in pan and heat on med-high, once heated place chicken breast in pan, cook until browned on both sides and juices run clear, in separate pan heat 1 tbs canola oil, place diced onions, diced mushrooms, and diced garlic, cook on med heat until onions are transparent, then add baby spinach and cook about 10-15 min, until spinach in all done (it should turn dark green and look wilted) when chicken is done remove from pan and allow to cool, once cooled slice chicken to make a pocket or in half like a bun an place spinach mixture in center with 1 slice of mozzarella cheese on top pf spinach mixture and close chicken, spray the bottom of a small baking dish with canola spray, and place half of the remaining spinach mixture in bottom of pan, place stuffed chicken on top of spinach mixture, put remaining spinach mixture on top of chicken, top with 1 slice of mozzarella each, put in preheated oven and bake at 350? until cheese is melted about 10 min. Remove and serve!
