1 Tbsp Dried Chopped Onion
1 tsp Chili powder
1 tsp Cumin powder
2 tsp Italian Seasoning
.5 tsp Pepper, black
1 tsp Salt
1.5 cup Cheese, Kraft 2% Milk Reduced Fat Shredded cheese ( I used mozzarella and cheddar)
3 15 oz cans diced Tomatoes with Basil, Oregano
2 cup Spinach, fresh chopped fine

Here is how you make Quinoa and Spinach Stuffed Peppers:

Preheat oven to 375 degrees.Prepare Quinoa as directed on package and set aside to cool.Combine turkey, egg, seasonings, spinach, cooled quinoa and 1 cup cheese.Remove tops of peppers and clean out the seeds.Stuff turkey mixture into each pepper cavity and stand peppers up in a baking dish or multiple baking dishes if needed. Empty 3 cans of tomatoes into baking dish on and around the peppers. Bake for 30-45 minutes until peppers are soft. Top with remaining cheese.
