Here is how you make Spinach and Mushroom Stuffed Pastry:

Preheat oven according to directions on pastry package.Fry shallot briefly until slightly softened and browned (in oil or a non-stick skillet). Add minced garlic and mushrooms to pan and saute until garlic is fragrant. Add in cooking sherry, then spinach until slightly wilted.Sprinkle or spread goat cheese on sheet laid flat. Lay contents of skillet down the middle of the sheet. Fold sides and ends over to make a roll. Place on a baking sheet, folds down, and make a few slices in the top of the pastry to vent. Bake according to directions on puff pastry package, or until golden brown on top.
