I made them with extra lean ground beef this time but generally make them with turkey. I puree the spinach becuase my daughter is picky about what foods can be mixed but it works just as well diced you just may need to add a little of the soup to the mix for mouisture.

Here is how you make Stuffed Peppers (with spinach):

Prepare the peppers and place in a deep baking dish (they should fit tightly so they don't spill when cooking. Puree together spinach & half of tomatos (you can just chop the spinach fine but you will need to add some soup to the mixture for moisture). Mix spinach, tomatos, rice, and beef together. (I also dice the tops and add them) & spoon into prepared peppers. BAke at 350 deg covered for about 1 hour.
