Cacik (pronounced Jajik) is a traditional Turkish dish - it's Salted Garlic Yogurt (like Tzatziki) that you can serve with a variety of vegetable dishes - usually cold - but we like this one served warm. This variety is a great way to enjoy spinach. We eat this as a main dish but you can serve it as a side. Tradionally you would eat it with Pita bread, but if you're dieting (like me) you really don't have to. Also, for a gluten free alternative, you can substitute quinoa for the bulgur.Even my 5 yr old loves it!

2 Tbsp Extra Virgin Olive Oil
1 Medium Onion, Diced
3 - 8 Oz bags Spinach
3/4 C. Tomato Paste
1/4 C. Fine Bulgur

GARLIC YOGURT (Cacik ("Jajik"))
2 C. Plain Yogurt 2%
2 clove garlic smashed to a pulp
1/2 tsp - 1 tsp salt.
Adjust the salt & garlic to your own taste.


How Do I Make Spinach Cacik (pronounced Jajik)?

Here is how you make Spinach Cacik (pronounced Jajik):

Heat oil in a large skillet and add the diced onion. Clean & chop the spinach and slowly add it to the frying onion. Cover to allow the spinach to shrink. Add the Tomato Paste and Stir well. Cook for 10 minutes or until the Spinach changes from bright green to dark green. Rinse the Bulgur, add it to the spinach mix. Stir well & cook for another 5 minutes. Prepare the Garlic Yogurt - make sure the garlic is well smashed - It's better to use a mortar & pestle with a bit of salt. Mix with the Yogurt and enough salt to taste, until smooth. The Spinach Mix makes approximately 6 cups cooked - enough for 3 - 2 cup servings. Top each serving with some of the yogurt - as much or as little as you want.
