1. Preheat oven to 375 degrees. At this point, you can either cook your bacon in the microwave or the skillet. I chose the microwave so I could drain the grease. But I'm sure it would taste great either way. :) 2. Heat a small, oven safe skillet (I use cast iron) to medium heat on the stove. Spray with Misto or non-stick cooking spray if you cooked your bacon in the microwave. 3. Saute sun dried tomato, chopped cooked bacon, and fresh spinach until spinach wilts. 4.
