Here is how you make POSH SQUASH:

Slice squash and cook in very small amount of water until tender. Drain and set aside in large bowl. Beat eggs well and add onion, green pepper, mayonnaise, cheese, salt and pepper. Fold this mixture into squash.Spray a 9 x 12 inch dish. Pour casserole mixture into it.Sprinkle with bread crumbs.Place in preheated 350 F. oven and cook for 45 minutes.Serving Size: 9 x 12 inch pan.
