Here is how you make Catfish stew:

Boil 3 c. water. Add brown rice, cover and cook 45- 50 min.Spray large skillet with olive oil.Chop onion, garlic, celery peppers and add to pan. Cook until just softened. Add okra and corn and cook additional 5-10 min. until softened. Add tomatoes and bring to a simmer. Chop catfish into 2" pieces. Place greens and catfish on top of skillet, cover and cook until collards and catfish are cooked through.
