2 tbsp olive oil
1 large sweet potato (also known as yam), cut into 2" cubes
1.5lb large taro root, cut into 2" cubes
1 lb okra pods, cut into 0.5" slices
1 bunch collard greens, sliced thin
1 jalapeno pepper, de-seeded and sliced thin
1 tbsp allspice
1 tbsp dry thyme
1 tsp cayenne
2 tsp onion powder
1 tsp garlic powder
3 bay leaves, whole
Better than Bouillon Chicken (or No Chicken) base
1 quart TJ's Vegetable Broth
Water to cover
dash of salt and pepper, to taste

Here is how you make Callaloo Stew:

Cook leeks, onion, and garlic in 1 tbsp olive oil. Add sweet potato and taro and stir. In a separate pan, cook sliced okra in remaining oil to cook out slime, then add to taro and sweet potato. Add vegetable broth, water to cover, and bouillon base. Add spices and bring to a boil. When pot reaches a boil, reduce heat and simmer, uncovered, 1 hour, until taro and sweet potato are cooked through and tender, and stew is a thick consistency. Add salt and pepper to taste.
