This is a tarragon-based (dragon's herb) recipe. We used a lean beef for the stew - but you can use any cut you prefer. Drop in bay leaves.In separate pan, combine wine and remaining seasonings. Bring to a boil and reduce heat to simmer. Reduce to 2 cups, then add to meat pot.Add chopped potatoes and carrots. Bring to boil and then reduce to med-lo.
