1. Place olive oil in heavy saucepan over medium-low heat. Add the onion; stirring occasionally, cook until wilted, about 12 minutes. Add the garlic during the last 2 minutes. Stir in the cumin and cook 2 minutes more.2. Add chickpeas, tomatoes, carrots, thyme, honey, lemon juice, broth, red pepper flakes, salt and pepper. Bring to boil - skim off any foam. Reduce heat and simmer uncovered for 15-20 minutes. Adjust the seasonings and stir in parsley.3.
