First, cut all fresh ingredients (onion,celery,green bell peppers) and saute them for about 7 minutes. Then, Cut your chicken. Saute the chicken for abour 4-5 minutes (or where it starts to get white but still has a good amount of pink/rawness to it) Then, add these and the rest of your ingredients (NOT the cilantro) to a pot (3qt or bigger).Heat over medium-high heat to boiling. Reduce the heat to low and simmer for 10 minutes or until thoroughly heated.Stir occasionally. At the end, stir in the cilantro.
