1 pkg turkey sausage sliced
1 c chopped carrots
3 lb mixed mushrooms sliced thick
2 tbsp flour
2 tbsp paprika
1/2 c marsala
4 c veg broth
4 c black beans
1 tbsp balsamic vinegar
3 c (1/2 lb) frozen leaf spinach
dash of cayenne

Here is how you make Mushroom Stew:

Heat olive oil. Saute onions and garlic 2 minutes. Add sausage. Brown. Add carrots. Add mushrooms. Saute 15 minutes or until water evaporates. Stir in flour and paprika. Add marsala. Cook 1 min til liquid is absorbed. Add broth and bring to a boil. Reduce heat and simmer 15 min. Add beans (whiz some up before adding if you want it thicker. Simmer 5 min. Add vinegar, salt,cayenne and pepper to taste. Add spinach. Cook 2 min.Serving Size:?8 servings
