Makes 8 servings, 1 cup eachCut beef into 2" pieces, trimming excess fat. Combine with onion and garlic in a 3-4 quart slow cooker. Mix together fajita seasoning mix and undrained tomatoes and pour over beef. Place peppers on top. Cover and cook on low for 7-9 hours or until beef is tender.Combine cornstarch and water in a small bowl and mix well. Add to crockpot and stir well to thicken. Cook on high for 10 minutes.
