Microwave potatoes. While they're cooking, open pinto beans (can also be made with black beans or kidney), rinse well. Place in a sauce pan. Add chopped garlic, tomatoes, a cup of frozen corn and heat thoroughly. Chop the potatoes when cool enough to handle and add to bean mixture. Salsa can be stirred in for desired "heat".
