8 oz sliced mushrooms
1 can no salt added diced tomatoes
1 can artichoke hearts in water (roughly chopped)
1 pkg frozen spinach, thawed and squeezed dry
1.5 cups cottage cheese
2 carrots, shredded
1/4 tsp salt
1/4 tsp pepper
1 c mozzerella and provolone cheese blend

Here is how you make Stuffed Shells with Artichoke:

Preheat oven to 400 degrees. Prepare pasta according to package, minus about 3 minutes of cooking time.Heat oil in a nonstick skillet over medium high heat. Add mushrooms. Cover and cook, stirring occassionally, for 5 minutes. Add the tomatoes(with juice) and the artichokes. Cover and simmer for 4 minutes.Combine the remaining ingredients, minus the mozzerella blend, in a large bowl. Fill the shells with a tablespoon each of the mixture. Place in a baking dish sprayed with cooking spray. Spoon sauce over the shells. Cover loosely with foil and bake for 20 minutes.
