1.5 cup Spinach, frozen
3 oz Mozzarella Cheese, part skim milk (not too much, just enough to hold it together.)

Here is how you make Stuffed Filet:

Thaw, drain, and Chop spinachChop onions and mushroomsSautee all in olive oil, with salt, pepper, and herbs to taste.Remove from heat and let cool some before adding mozzarellaSlice the room temperature beef roast . First slice 1/4-1/3 from the top. Do not cut all the way through, but to ~1/2 inch from edge. (right handed, go right to left.)Second Slice starting in the center and slicing toward the other side. (Left to right.) again do not slice all the way through. Your meat should now open like a tri-fold.\__/ Salt and pepper insides. add ~2/3 of spinach mix to the cavity. Fold the inner slice over. Add rest of filling and fold the outer slice over. Secure the seam with kitchen twine or tooth picks. Rub entire roast with olive oil and season with salt and pepper. Sear roast in hot pan for 2-3 minutes per sided. Roast at 400f for 25minLet rest, covered 10-15minutes. Slice and serve.
