1 cup peeled sliced carrots - (1/2 16oz bag of chip dip carrots)
1 green pepper cored & sliced into thin strips or wedges
1 red pepper cored & sliced into thin stips or wedges
1 cup jullienne sliced onions (abt. 1 small yellow onion)
1 8oz can sliced Hokan water chestnuts drained
Optional: sliced green onion for a garnish

Meat:

4 boneless skinless chicken breasts (I use Perdue frozen fillets abt. 4.8 oz each in the 10lbs bags from Costco)

Sauce:

1 Tbsp Cornstarch (I used Argo)
6 Tbsp Hunts Ketchup (abt. 1/4 cup)
1/2 cup cider vinegar
1 Tbsp. honey
1 tsp granulated sugar (if desired)
1 Tbsp Maggi Taste of Asia Sweet Chili Sauce
1 tsp Kikoman light soy sauce
Pepper to taste
1/2 tsp grated fresh ginger (or to taste)
Pineapple juice drippings (see instructions)
1 Cup Water - added as needed in final step

FRUIT

1 cup sliced fresh pineapple - tidbit size
(save time by purchasing cored & sliced in the produce section)

2 cloves garlic
1/2 tsp. ginger

Here is how you make Meredith's Sweet and Sour Asian Zensation:

SLICE OF ADVICE: Prepare your veggies & cubed chicken ahead. Use freezer bags or a bag seeler and pop them into fridge or freezer so they're ready to go for a quick week-night meal. If serving rice with this dish you can also prepare your rice in advance and divide it into 1/2 cup portions and freeze or refridgerate separtely for portion control.1. Slice vegetables and set aside.2. Core and slice pineapple and set aside (*reserve any juice from the pineapple to substitute for the water)3. Rinse chicken & pat dry. Trim any remaining fat/skin from chicken and slice into strips or small 1/2 inch cubes.4. Prepare sauce excluding the water. Wisk & set aside.5. Spray frying pan or wok with cooking spray and place on medium high - to high heat. Add a drizzle of the sesame oil. 5. Add chicken to pan when oil is hot. Cook 5-7 minutes stirring often until chicken browns and is cooked through. (depending on the size of your pan you may wish to cook chicken in 2 batches.)6. Remove chicken and set aside.7. Add onions first and as they begin to brown add remaining vegetables and additional garlic and grated ginger as desired. Drizzle a small amount of sesame oil to flavor the vegetables & cook to desired tenderness stirring often.SLICE OF ADVICE: Add a splash of Nakano Red Pepper Seasoned Rice Vinegar in place of the Sesame Oil to reduce fat & calories and help deglaze the pan - yummy!8. Return meat to the pan & add sauce to meat & veggies and heat until sauce begins to thicken. Add water/remaining pineapple juice 1/4 cup at a time to thin the sauce to desired consistency.9. Serve immediately. Garnish with diced red pepper or slivered green onions.Serving Suggestions: 1/2 cup warm brown rice (not calculated in calorie count) per person.SLICE OF ADVICE: Because this recipe is meant to serve 8, if you don't have 8 people avoid the temptation to overeat by dividing the meal into 8 equal portions before you sit down to dinner. Take the leftover's to work for a preportioned gourmet lunch or half the recipe before you begin. (personally, if I go to all the trouble to make this fresh market meal I want the night off the next day. TIP - don't reheat in the microwave if possible or the chicken will taste funky.)
