By combining super lean ground beef, ground turkey and TVP, I was able to come up with a supper that had a full meal of calories and protein to keep me going and fill me up. How Do I Make Mamacita's Sweet Creek Enchiladas?Here is how you make Mamacita's Sweet Creek Enchiladas: Hydrate TVP according to package directions, cook ground meat together, add TVP to meat mixture. Add garlic, chili powder and cumin to taste. Set aside. Take black beans and to 1/2 C, add 1 T salsa.Cook brown rice, adding a dash of chili, cumin and garlic, if desired; and add 1 T salsa to 1/2 C.Put 1/4 c meat mixture in each tortilla, roll and set in baking dish. When pan is filled, top with 1/4 c sauce per TWO enchiladas. I did NOT add cheese. Bake at 300 for 15 mins so everything is heated through.
