Credit to the original recipe belongs to the BeachBody team. I found it in their "thin kitchen" recipe book. I altered it slightly. Their version is meatballs, but I find it difficult to shape the meat with all the rice. Patties are easier. Flip gently on stove. If you choose to make meatballs, the original recipe says to cook for 25 minutes at 350 degrees. If you'd like to add the green onions, they call for 1/2 cup in the meat mixture. This recipe was a huge hit in my family full of picky eaters! My dad had three servings... and he usually eats like a girl. My mom literally used her finger to lick the sauce bowl clean. My mom suggested trying the sauce on chicken breasts as well. "Thin Kitchen" book says servings are 4 meatballs. Each serving containing about 120 calories, 4 g fat, 0 g saturated fat, 12 g carbs, 0 g fiber, 8 g protein.

1 lb lean ground turkey
1 cup cooked brown rice
one 8 oz. can crushed pineapple, drained
1/2 cup green onions (if desired)
1 TBSP light soy sauce
1 tsp ginger

3/4 cup reduced sodium low fat chicken broth
1/3 cup chili sauce
3 TBSP rice vinegar
2 TBSP Splenda brown sugar blend
2 tsp cornstarch
1/2 tsp ground ginger


How Do I Make Sweet and Sour Meatballs (Patties)?

Here is how you make Sweet and Sour Meatballs (Patties):

In large bowl, mash together the lean ground turkey, brown rice (make sure it's cooked thoroughly), crushed pineapple (if it's 'chunked", but it through the food processor... save a few 'chunks' for later), green onions (if desired, I chose without), light soy sauce, and ginger. Cook as meatballs if desired, or on stove as patties on medium heat. I didn't remember to time it, but it doesn't take long to cook, so dont want away. In separate pot, combine chicken broth, chili sauce, rice vinegar, brown sugar, and ground ginger. Slowly add cornstarch and use wisk to avoid lumps. Bring sauce to low boil, then allow to simmer to thicken slightly. Final consistency shouldn't be watery, but not thick like ketchup either. After you take it off the stove, it will thicken slightly more as it cools. The cornstarch will thicken it, so you can slightly alter that as you prefer. Strain out any stubborn cornstarch lumps. Garnish top of patties with a few piece of pineapple chunks, if desired (you cant taste the pineapple in the patties, so if you want to taste it, add the 'garnish'). And drizzle sauce over patties.
