About 12 oz. pork loin cut in strips
1 lg. sweet potato, cubed
1 sm. onion, chopped
1 sm. apple, sliced
1/4 c. wheat flour
1/2 tsp. salt
1/4 tsp. black pepper
1 TBSP Olive oil
2 c. low-sodium chicken broth
1/2 c. fresh or frozen cranberries
1 TBSP dijon mustard

Here is how you make Pork and Sweet Potatoes:

Heat oil in large skillet. Put flour, salt and pepper in a plastic bag and mix. Add pork strips and mix to coat. Add to fry pan and brown. Remove meat and set aside.Put cubedsweet piotatoes in pan and add 2 c. broth. Cover and bring to a boil, then reduce heat and cook for 2 to 3 minutes, then add the cranberries. Cover and cook for another 2 or 3 minutes or until potatoes are soft. Stir in the mustard and then return the pork to the pan , add the onions and apples and stir.
