What Are The Ingredients For Cinnamon-Maple Mashed Sweet Potatoes Recipe?The ingredients for Cinnamon-Maple Mashed Sweet Potatoes are: Three medium sweet potatoes, all-natural maple extract (I found mine at Whole Foods), though vanilla or almond extract would probably work as well, three packets of Truvia, a liberal sprinkling of cinnamon (2-3 tablespoons)How Do I Make Cinnamon-Maple Mashed Sweet Potatoes?Here is how you make Cinnamon-Maple Mashed Sweet Potatoes: First, cook sweet potatoes, either by baking (wrapped in tin foil) at 350 for about an hour, or by microwaving (cut off ends, poke holes all over sweet potatoes with a fork, place on a plate covered with a damp paper towel, microwave for 4 min, then turn over, then microwave for another 4 min, etc., until potatoes are slightly soft to the touch).Cut potatoes into approx 2" pieces, put in a large bowl and mash, either with a fork, a potato masher, or a handheld mixer. Add 1/2 to 1 teaspoon of Maple extract, three packets of Truvia, and a very liberal sprinkling of cinnamon. I measure it out into about 1/2 c. servings (three medium sweet potatoes made me about 5 1/2 c. servings) and refrigerate it in snack-sized ziplock bags to bring to work and microwave for lunch and dinner.
