I made this dish up from different recipes I saw for quinoa and common ingredients for mango salsa. I think it still needs some tweaking. I might try it with a chicken broth when I have it on hand next time. Suggestions for adding something more are welcome. I made this with some pork chops and it seemed to go well together. Also, some amounts are estimates such as for the cilantro and ginger. Use what works for you.

1 medium red onion
1 medium sweet red pepper
2-3 sprigs of fresh cilantro
1-2 Tbsp of fresh chives, chopped
2 fl oz. of lime juice
1 Tbsp ground ginger
3 Tbsp olive oil
1 mango
half cup raw blanched slivered almonds

Here is how you make Sweet Mango Quinoa:

Dice the red onion, red pepper, and mangoDe-stem the cilantro and chop into small piecesChop the chivesAfter rinsing and draining the quinoa in cold water before cooking, place 1 cup quinoa and 2 cups water (may substitute chicken broth for more flavor) in a 1 1/2 quart saucepan and bring to a boil. Reduce heat to simmer, cover and cook until all water is absorbed (10-15 minutes). Using an olive oil cooking spray, cook the red pepper and onion on low to medium heat until soft.When the quinoa is done, set aside to cool and add olive oil.Add all other ingredients and stir gently.
