1 (1.5 pound) flank steak
1t. salt
1t ground black pepper
2 T. olive oil
2 medium sweet onions, thinly sliced
1 C. beef bullion or broth
2 C. of diced tomatoes
1 T. dried rosemary
1 bay leaf
2 T. all-purpose flour


How Do I Make Flank Steak with Sweet Onions?

Here is how you make Flank Steak with Sweet Onions:

Sprinkle flank steak evenly with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Add steak and cook for 2 minutes on each side, or until browned. Remove steak and set aside. Add onions to Dutch oven, and cook for 10 to 15 minutes, stirring frequently, or until onions are tender and caramel colored. Stir in buillion, diced tomatoes, rosemary, and bay leaf. Return steak to Dutch oven, cover and bake for 1-1/2 hrs. or until meat is desired doneness. Remove and discard bay leaf. Remove steak from cooking liquid; set aside and keep warm. Remove 1/2 C. tomato mixture from Dutch oven, and whisk in flour until smooth. Add flour mixture to Dutch oven. Bring to a boil over medium-high heat, stirring frequently, for 2 to 3 minutes, or until tomato mixture is thickened. Cut steak across the grain into thin slices, and serve with tomato mixture.
