Add tofu, stir gently and marinate for several hours (over night or all day works too).Ten minutes before serving time, set up your wok (or skillet) and let it heat up for a few minutes. Add oil and stir fy your peppers, scallions and mushrooms over high heat. Add the salt, and the marinated tofu (add the marinate sauce too).
