In a larges saucepan, add 1st 3 ingredients & 2 tsp of the salt (reserving 1 tsp for end of cooking seasoning). Bring to a boil, reduce heat & cover. Cook until tender - approx 25 minutes. Meanwhile, mix up cheese in a bowl & set aside.Drain & add butter after returning to heat. Cook over medium-low heat to reduce liquid, about 2 minutes. Sprinkle with remaining 1 tsp salt & cracked pepper.Using a hand mixer or food processor, mash turnips. Add sour cream, mix.
