This recipe has A LOT of prep involved but the actual cooking (heat) is only about two to four minutes. Don't be daunted by the long cooking instructions there isn't too much active time involved.

The ingredients for "Basic" Pad Thai are:

1/2 block of extra firm tofu
1/2 lb Thai rice noodles (wide)
florets from 1 medium stalk of broccoli
4 oz bean sprouts
1 egg
1 tbsp canola oil (divided into one tsp & two tsp)
1 tbsp fish sauce
juice of half a lime
1 tbsp granulated sugar
3 tbsp rice vinegar
1/2 tsp garlic powder
1 tbsp paprika
fresh cilantro
1/2 oz peanuts (chopped)


How Do I Make "Basic" Pad Thai?

Here is how you make "Basic" Pad Thai:

Ok, here goes. . . Cut tofu block in half transversely and then half the laterally. Place 4 layers of paper towels in a cookie sheet, place tofu on towels and cover with another 4 layers of paper towels. Place another cookie sheet on top and apply weight about 4 canned products for about 30 minutes. Next, cut tofu into 2 inch long strips about 1/2 inch thick. After that, place tofu in marinade for 20 minutes to 2 hours. I use; 1/3 cup sesame oil, 2/3 cup rice vinegar, 1 tbsp garlic chile sauce, a dash of worcestishire sauce and 1 tsp ginger. Bake tofu on parchment paper on cookie sheet for 30 minutes at 375. You could of course fry them but then the calories skyrocket.Stir fry broccoli in 1 tsp canola oil for about 4 minutes, then move to a covered bowl for at least 10 minutes.Prepare the rice noodles as package suggests, I usually do the soak method.Get the rest of ingredients separated and ready while the tofu is baking because the rest of this will be hot and fast (just remember to stir OFTEN):1. Add 2 tsp canola oil to HOT wok and scramble the egg for about 15 sec, then add sprouts.2. After 20 sec. add tofu, broccoli, garlic powder and fish sauce. 3. After about 30 sec. add noodles and sugar. Let the water stuck to the noodles cook off then add vinegar and paprika. Cook until relatively dry maybe 20 sec.4.
