Here is how you make Tomato Concasse:

1. Remove and discard the stems from the tomatoes. Score the tomatoes with the tip of a knife.2. Plunge the tomatoes in boiling water for 1 to 2 minutes. Let them cool for a few seconds, then peel off the skins.3. Seed then dice the tomatoes.4. Mince the onion and chop the garlic.5. Sweat the onion in the olive oil, and then add the tomatoes, garlic and bouquet garni. Season with salt and pepper and add the sugar.6. Place a perforated disk of parchment paper directly on top of the tomatoes.
