2-3 medium Zucchini halved and sliced
1 Summer Squash halved and sliced
1 can peeled whole tomatoes in sauce (no salt added)
1/2 cup sliced or chopped onion (whichever preferred)
1 cup quartered mushrooms (approx. I use leftovers usually. Not a staple for this dish.)
1 tsp Black Pepper (To Taste)
.5 tsp McKormick Perfect Pinch Garlic&Herb (To Taste. Any seasoning will do. All to taste.)
1/4 cup shredded Pepper Jack Cheese (Any brand will do)

Add shredded Pepper Jack cheese to top just before serving if desired. Very delicious served this way.

NOTE: Nutritional values are according to this exact recipe/measurement. Adding more cheese will change the calorie count significantly as will reducing or omitting cheese. More veggies don't make much difference.
(All ingredients are approximate as I never actually measure while cooking this. All to taste and preference, as well as servings required. Need more? Add more veggies, don't forget to add more tomato juice. Adding a bit of water to the left over tomato juice works well more moisture. Be sure not to add to much liquid, just enough to coat the veggies.)

Here is how you make Mom's Zucchini Tomato Dish:

Place all items in large deep pan on medium heat. Use a small amount of Olive Oil cooking spray if needed to prevent initial sticking. Pour half can of leftover tomato juice over mixture and stir lightly to blend. Bring to simmer reduce heat to med-low; cover. Allow to simmer until veggies are tender. Check/Stir occasionally.
