1/2 lb extra lean ground beef or turkey (turkey used in recipe)
1/2 cup onion, chopped
2 cloves garlic, minced
1/2 cup canned kidney beans, rinsed, drained, and mashed
2 green chile peppers, seeded and diced. I used Anaheims in the recipe
2 tsp chili powder
4 large whole wheat tortillas, I used La Tortilla Factory low carb- high fiber (80 calories each)
2/3 cup shredded lettuce
1 cup chopped tomato
1/2 cup grated low-fat jack cheese (I couldn't find this, so I used 4 cheese Mexican blend, reduced fat)


How Do I Make Tortilla de Godzilla?

Here is how you make Tortilla de Godzilla:

In a large non-stick skillet over medium high heat, cook the meat onion and garlic until the meat is browned. Drain the fat.Stir in the beans, pepper, and chili powder and cook until hot. Remove from the heat. Warm the tortillas in the microwave for 20 seconds, then fill each with 1/4 of the mixture (about 1/2 a cup).
