Kosher salt 1/2 t. fresh ground black pepper 2 T. extra-virgin olive oil 1 medium onion, sliced 1 1/4 lbs. asparagus, trimmed and bias cut into 1 inch pieces (3 cups) 1 cup fresh or frozen shelled edamame 1/4 cup water 1 cup cherry tomatoes, halved 1 T chopped fresh basil 1 T chopped fresh thyme 2 t. lemon juice 2 T pine nuts, toasted How Do I Make Turkey Paillards w/Asparagus and Tomatoes?Here is how you make Turkey Paillards w/Asparagus and Tomatoes: Makes 4 servings1. Cut the turkey tenderloin in half horizontally. Place each half between 2 pieces of plastic wrap and pound until 1/4 inch thickness. Cut each turkey piece in half crosswise to make 4 pieces. [This step isn't necessary if you buy thin turkey cutlets.]2. Season turkey with 1/4 t. salt and 1/4 t pepper.3. In large skillet, heat 1 T of the oil over medium-high heat. Add turkey in single layer. Cook for 4 to 6 minutes or unti browned and no longer pink, turning once. Transfer to serving platter, keep warm.4. In the same skillet, heat remaining 1 T oil over medium-high heat. Add onion, cook and stir for 2 minutes. Add asparagus, edamame and the water. Bring to boiling, reduce heat.
